Chicken Parmesan Meatloaf 02/11/12

Chicken Parmesan and Meatloaf are two of my favorite dishes; combine them both and you've got heaven in a loaf pan! Sooo good. I found this little gem over at What's Cookin' Chicago and knew I had to give it a try. Oh my goodness this is a good meatloaf! It makes enough for sandwiches the next day, too. Most people like their meatloaf sandwiches hot, but I love them cold with a touch of mayo. Mmm! So good.
