Let's lighten things up a bit since it's the new year! This turkey chili is perfect on a cold night and is easy to make. You can use ground beef, but ground turkey is just as delicious in this recipe.
2 lb fresh ground turkey, browned and drained
1 large onion, chopped
1 large bell pepper, red or green or mixed, chopped

This is one of the best chili recipes I've ever had the pleasure of making. Serve it with hot cornbread or white rice and you'll sure have a hearty meal.
It makes about 10-12 servings so you'll probably have left-overs, but no worries because this chili freezes quite well.

This weeks menu consists of two vegetarian meals, Black and White Bean Chili and Cauliflower Casserole. You can always add chicken or beef to the chili, but the flavor is so good that it really doesn't need it.
