Sausage Hash Brown Casserole 08/02/12
I’ve made this for both breakfast and dinner; my family loved it both times. Add a dollop of sour cream on top to add a bit of richness. This is a wonderful casserole to serve for potluck dinners, too.
Sausage Hash Brown Casserole
Ingredients
1 lb mild pork sausage
1 lb hot pork sausage
1 (30 ounce) packages frozen hash browns
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese
6 large eggs
2 cups milk
2 -3 spring onions, finely chopped
1 (4 ounce) cans chopped chili peppers
Directions
Cook sausages in large skillet over med-high heat — stirring until crumbled and done. Drain well.
Prepare hash browns according to pkg directions, using 1/tsp salt and pepper.
Stir together hash browns, sausage, cheese, onions and chili peppers. Pour into lightly greased 13 x 9 inch baking dish.
Whisk together eggs, milk and remaining 1 tsp salt*. Pour evenly over potato mixture.
Bake at 350 for 35 to 40 minutes.
