Bruschetta Chicken 01/28/12
This is an EASY dish to quickly toss together and it’s a good dish, too. Always keep the ingredients on hand for those nights when you just don’t want to spend too long in the kitchen.
Bruschetta Chicken
1 1/2 lb boneless chicken, cubed
1 can(s) diced tomatoes, 15 oz can
1/2 c water
1 tsp salt
1 Tbsp minced garlic
1 bx chicken-flavored stuffing mix
2 c shredded mozzarella
1 Tbsp italian seasoning
Preheat oven to 400 degrees. Spray 9×13 inch glass baking dish with cooking spray.
Toss chicken with salt. Place in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix; let sit to soften.
Sprinkle the cheese on top of chicken, then Italian seasoning and then stuffing mixture.
Bake uncovered for about 30 minutes.
